Blended Chocolate & Peanut Butter Overnight Oats

In this modern day and age, it can feel increasingly tricky to find a topic that all humans see eye to eye on. However, the timeless combination of peanut butter and chocolate seems to be something that nearly everyone can agree is an irresistible match made in dessert heaven. Something about smooth, nutty peanut butter intertwined with rich, decadent chocolate is a treat worth savoring for even the pickiest of tastebuds.

On the other hand, oatmeal does not boast quite the same cult following as peanut butter and chocolate and is notoriously challenging for picky eaters to find palatable. As someone who is no stranger to trying new and intriguing foods, I can even understand how the texture of oatmeal can quickly turn some noses up. The good news is that unassuming ingredients can be transformed by the proper preparation and pairings to make a dish go from mushy, flavorless slop to a nutritious, delectable dessert for breakfast. The answer to leaving unappetizing oats in the dust is surprisingly simple: blending!

Blended oats create a whipped mousse-like texture, perfect for pairing with creamy peanut butter and roasted cacao powder. Allowing blended oats to set in the fridge overnight instead of cooking them erases the gloopy consistency that can (literally) be hard for some people to swallow. For an additional boost of peanut butter chocolatey goodness, this overnight oats recipe is topped with a luscious marbled chocolate glaze, because you simply can never have too much chocolate! Whether you have a hectic work schedule, kiddos in full swing into the new school year, or maybe all of the above, whipping up a batch of this grab-and-go breakfast before the start of your busy week will make skipping the most important meal of the day a thing of the past.

Blended Chocolate & Peanut Butter Overnight Oats Recipe

Makes approximately 3-4 servings (depending on jar size).  

Ingredients

Chocolate Glaze  

Directions

  1. Add all ingredients (besides chocolate glaze ingredients) to a blender. Blend on high for 1-2 minutes until a smooth consistency is reached.
  2. Pour blended oats mixture evenly into 4oz. – 8oz. jars of choice and set aside. Our 7oz. Pantry Jars work perfectly! Make sure not to overflow the jars to leave room for the glaze.
  3. Now, for the chocolate glaze! In a double boiler insert, add coconut oil and heat on low until fully melted.
  4. Transfer melted coconut oil to a small bowl and add roasted cacao powder, sweetener of choice, vanilla extract, and pinch of sea salt.
  5. Whisk vigorously until you reach a glossy, runny chocolate glaze consistency. Allow to cool for about one minute.
  6. Pour chocolate glaze evenly over the top of each oat mixture jar. Carefully secure jars to avoid disturbing the glaze layer. Place in fridge and allow to set overnight.
  7. Once morning rolls around, grab an overnight oats jar from the fridge before running out the door so you can take on the day with a nourished and satisfied belly. Enjoy! 

Pro Tips

  • Don’t worry if your blended oat mixture seems very liquidy after blending; this is normal! The oats and chia seeds will absorb the extra liquid while setting overnight.
  • If you’ve got a little extra time and want your overnight oats to be as beautiful as they are tasty, mix 1 Tbs. of peanut butter with a touch of hot water until the consistency is slightly runny. Once you pour the chocolate glaze over your oats, add a small dollop of the diluted peanut butter on top, gently swirling around with a chopstick or skewer to create a marbled effect that’s (nearly) too cute to eat.
