Spicy Quick Pickled Red Onions

I fell in love with this traditional Mexican condiment from the Yucatán several years ago while noshing on tacos at my favorite little taquería. Complimentary bowls kept appearing as I greedily stuffed the pickled rings between folded tortillas.
