I fell in love with Pfeffernusse cookies at my first real job at a German Deli in Atlanta while in my freshman year of high school. We sold them only during the holiday season, but I would crave them year-round. I loved the warmth from the spices and the firm, chewy texture. I tried a few recipes that I found over the years and was never quite satisfied with the outcome, so I made some adjustments and tweaks in my little kitchen “workshop” and finally came up with a recipe that has all the right notes. I was also happy to find out that by adding a little extra ginger and chilling overnight, this dough is perfect for creating cut-out gingerbread cookies to decorate!
Pfeffernusse cookies, also known as peppernut cookies, are a small and dense spice cookie from Germany. The dough is dark and warming, similar to gingerbread, and the cookies are often either iced or sugar coated. While tasty throughout the year, they are especially popular during the winter or holiday season.
Which spices are used in “Peppernut Cookies”?
Popular spices for Pfeffernusse cookies include black pepper, cinnamon, allspice, nutmeg, cloves, and ginger. The combination of these warming spices with the flavor of dark molasses makes for a classic, wintery treat! When working with spices, you might find it helpful to have a hand-held grinder, mortar and pestle, and/or nutmeg grater on hand.

Ingredients
• 2 1/4 cups all-purpose flour
• 1/4 tsp. freshly ground organic black pepper
• 3/4 tsp. organic cinnamon powder
• 1/2 tsp. organic allspice powder
• 1/4 tsp. freshly ground organic nutmeg
• 1/4 tsp. organic clove powder
• 1/4 tsp. baking soda
• 1/2 tsp. fine sea salt
• 1/2 cup (1 stick) unsalted butter or vegan butter, room temperature
• 3/4 cup firmly packed light-brown sugar or date sugar, or 1/2 cup agave or maple syrup
• 1/4 cup unsulphured molasses
• 1 large egg or egg replacer
• 1/2 tsp. organic vanilla extract
• 1 cup powdered sugar

Pro Tip: As noted above, this recipe also makes terrific rolled gingerbread cookies. Just add a teaspoon of organic ground ginger when adding the other spices, chill dough well, cut out, bake, and decorate! The dough does not need to be chilled for making Pfeffernusse cookies.
