Paleo Mixed Nuts (3 Ways)

When I go to the store, hankering for a delicious and healthy snack, mixed roasted nuts always seem like a good call. That is, until I look at the exorbitant price tag and I settle for whatever plain nut is available (preferably on sale). I discovered something though; you can get that wonderful mixed nut experience without the hefty price tag. All it takes is about 20 minutes of your time. The bonus is you get to flex those creative culinary muscles, should you choose to get fancy with it.

The idea turned into inspiration, then research, then full-blown confidence that I could pull this off. It’s seriously one of the easiest things you could do in the kitchen. Once I realized the simplicity of making roasted mixed nuts, I thought, “Why have I not been doing this all along?”. After the regret faded, floods of recipes entered my brain. Today I’m sharing three of them with you: a sweet one, a savory one, and a curried one.


Pumpkin Pie Spiced Roasted Mixed Nuts

Ingredients

  • 1 cup organic raw almonds
  • 1 cup organic raw cashews
  • 1 cup organic raw pecans
  • 1 cup organic raw walnuts
  • 3/4 cup organic pure maple syrup
  • 1 Tbsp. grass-fed butter
  • 1 tsp. fine sea salt
  • 1 tsp. organic pumpkin pie spice

Directions

  1. Pre-heat oven to 350°F.
  2. In a large bowl, combine all your nuts.
  3. Melt butter in a pan over low heat.
  4. Turn heat off and pour maple syrup into melted butter.
  5. Whisk pumpkin pie spice into butter and maple syrup mixture.
  6. Pour in the butter, syrup, and pumpkin pie spice into the mixed nuts.
  7. Mix everything together with your hands or a wooden spoon.
  8. Pour mixed nuts onto a baking sheet lined with tin foil or parchment paper.
  9. Roast in oven for 10 minutes.
  10. Remove nuts from oven and mix around on the baking sheet for a couple of minutes to make sure everything is coated nicely.
  11. Bake for an additional six minutes. Color should be noticeably darker after roasting.

Savory Roasted Mixed Nuts

Ingredients

  1. Pre-heat oven to 350°F.
  2. In a large bowl, combine your nuts, spices, salt and oil.
  3. Mix everything together with your hands or a wooden spoon.
  4. Pour mixed nuts onto a baking sheet lined with tin foil or parchment paper.
  5. Roast in oven for 10 minutes.
  6. Remove nuts from oven and mix around on the baking sheet for a couple of minutes to make sure everything is coated nicely.
  7. Bake for an additional six minutes. Color should be noticeably darker after roasting.

Coconut Curry Roasted Mixed Nuts

 

Ingredients

Directions

  1. Pre-heat oven to 350 °F.
  2. In a large bowl, combine all your nuts.
  3. Melt coconut oil in a pan over low heat.
  4. Whisk curry spice into the coconut oil.
  5. Pour the coconut oil and curry spice into mixed nuts.
  6. Mix everything together with your hands or a wooden spoon.
  7. Pour mixed nuts onto a baking sheet lined with tin foil or parchment paper.
  8. Roast in oven for 10 minutes.
  9. Remove nuts from oven, add the coconut flakes, and mix on the baking sheet for a couple of minutes to make sure everything is well blended and coated nicely.
  10. Bake for an additional six minutes. Bake for an additional six minutes. Color should be noticeably darker after roasting.

Pro tips

  • Roasted mixed nuts make great gifts! Buy some fancy bags and create fun labels. Your friends and family will love it.
  • Everyone’s oven seems to be different. Play around with the oven temperatures and time.
  • Substitute any of my suggested nuts for other nuts and seeds.
  • Add dried fruit, or whatever ingredient your heart desires. Dried fruit should be added after you roast the nuts.
  • Play around with the spice amounts, too. One teaspoon may not be a strong enough flavor for you. To each their own!
